Sure it is possible - what else do you think the -DCONSOLE_SERIAL or -DCONSOLE_DUAL settings in src/Config are for ;) They are even properly documented. Etherboot supported serial console for ages. The only thing that was dropped is the serial console support in the NBI second stage loaders - but this is not important for the normal user, as it only prints a few lines before the loaded kernel starts.
